Packing Healthy Snacks

This weekend (like most this month) I have a craft show.  This one is extra long (Th-Sat)  -- so I have tried to make sure I have all of my healthy little meals and snacks packed and ready to eat.  

It definitely helps me to resist the chocolate samples in the booth right next to me, and the giant cookies across the aisle....

I am also happy to say, that before I went to the show I did a 30 day shred workout.  Now I just wish my scale would come loose... it has been hung up for the past few days and it is sort of starting to bug me.

I have not had sugar or white flour since Nov. 1st !  Hooray!!

Good Week

I decided that November had to be my month and opted to take a page out of Karilynn's book and cut sugar and white flour out of my diet.    I have to admit, there have been a few grumpy times... but overall, I am amazed at how I have felt, and the progress I have made.  

I know that I can do it for a month.  

I am hoping I can make significant changes in my lifestyle and diet for my family, and make it last longer than a month.  

I love that there are so many yummy things that are healthy -- things like cottage cheese and fresh pear for a snack -- things I forget about if I am not trying to eat healthy, because it is easier to grab some packaged junk.  This month is reminding me how good the healthy things actually taste.   I feel strong.

Eggs-plosion

As part of my eating healthy plan, I am eating a lot of egg whites.  This morning I had a grapefruit and an egg white.  My son saw the egg and wanted one -- I have been cooking the egg whites in the microwave, because it is so fast and easy... so I went ahead and put the yolk from mine with his egg and put them in the microwave after mine cooked.

I don't know how I have never heard that you need to be careful when nuking eggs.... but I know I am not soon going to forget.

After about 30 seconds I heard a loud -- and I mean LOUD (try it for yourself if you don't believe me)  BOOM.  One egg yolk exploded all over inside my microwave.  I took the the bowl out and thought I had better poke the other yolk with a fork so it wouldn't explode too... 
As soon as I touched it with my fork it blew up too... this time, all over my face and the kitchen.  It was even louder than the first one because there was nothing to muffle it.    A little crazy and scary.

Needless to say, my son would not eat an egg after that, and in his cute 2 year old voice he said,
"Mommy, you need to go take a shower!"

Ah, the adventures of trying to eat healthy.

Water

I am trying super hard to stay hydrated -- 100-150 oz of water a day.  Which means I am making 5 times as many trips to the bathroom... but it will be worth it if staying hydrated helps my body lose the unneeded weight.

Back

So after a week trip to Florida and the Disney meal plan for 5 days... I think October is a wash... I just hope that I am not even heavier than when I started.   I am planning on November being a much better month.

Hopefully I can check everyone's blogs soon and see how everyone is doing... but first need to tackle the mountains of laundry.

Tomorrow

So, we head to Disney World this week.  I am so excited to watch the expressions on my kids faces.

I have been exercising, but still not eating like I know I need to.  

Not much else inspiring coming out of me these days... If I don't have a fire lit under me when we get back from our vacation... I might just need one of you ladies to light one for me.
